Commonly associated with French cooking they are sometimes referred to as the “caviar of beans” by chefs due to their subtle creamy flavour.  These beans are traditionally paired with lamb or cassoulet-type dishes, but as with all our beans work in salads, soups, stews or even pureed as a dip.
