Capers are produced from the unopened flower bud of the caper bush (whilsh caperberries are the fruit from the same plant). These buds are then picked, dried in the sun and preserved with rock salt. Non-pareil means ‘without equal’ in French and is applied to the smallest capers with the most delicate flavour.
