Ground allspice is not a mixture of spices, but a single spice taken from ‘Pimento’. It has an aromatic almost peppery sweet flavour and is the main ingredient for many Caribbean dishes including Jamaican Jerk. It is also commonly used in sausages where it’s almost smoky flavour enhances the taste.
