Baby white silverskin onions with a crisp texture and a sharp, but not overpoweringly acidic flavour. It has the freshness of the onion, but without the sulphurous notes that pickled onions often exhibit. An excellent accompaniment to cured meats, pates or cheeses, or try one on a Gilda with olives and anchovies.
