It is also widely referred to as the forbidden rice due to its rarity in the past and could often only be afforded by the rich nobles. Nowadays however it is much more sought after and available due to its unique colour and flavour. Black rice that turns a shade of deep purple when cooking and gives off a buttery-nutty smell and flavour that is mouth watering. Great in rice salad dishes or also pairs well with vegetables and a creamy cheese such as our delicious Burrata.
