Originating from Bologna, Mortadella is a large cylindrical meat that is produced from heat-cured pork and flavoured with black pepper, before shavings of black truffle are incorporated. Similar to typical English luncheon meat, Mortadella has a delicate sweetness in flavour, which is complemented by the addition of elegant black truffle.
