This recipe for carrot and coriander soup is simply made, but also a little different. Carrots, onions and parsnips are quickly cooked in a vegetable bouillon to retain freshness of flavour. Chopped coriander leaf gives an aromatic flavour. They then sweeten with a touch of honey and a squeeze of lemon.
