Dijon mustard is a traditional mustard of France, named after the town of Dijon in Burgundy, which is the centre of mustard making. Traditional Dijon is smooth and has a medium heat. It is pale yellow and mixes well in sauces and vinaigrettes. The wholegrain variety retains whole mustard seeds for a more textured finish.
