Kopernik was established in Torun, Poland in 1763 by Jan Weese who started a family business producing traditional gingerbread called “Pierniki”. Jan’s grandson, Gustaw Weese, converted the original workshop into a modern factory in 1824. This was followed by further expansion and the company is still based in the factory built in 1913. Kopernik still uses the traditional recipes and techniques established by Jan Weese and still use only the highest quality ingredients.
